Cucina Povera recently upgraded its kitchen with the Sveba Dahlen Pizza Vichinga oven, a decision inspired by seeing the oven in action at the Fastfood & Café Stockholm trade show. Patrik and his team were drawn to the oven’s quality and versatility, including the ability to bake at up to 500°C/932°F on the upper deck and 350°C/662°F on the lower deck, which fit their needs perfectly. The restaurant’s previous Italian oven didn’t quite meet their needs, as it was better suited for Neapolitan pizza baking and couldn’t handle the lower temperatures required for their Roman pizzas. With the Pizza Vichinga, they’ve found the perfect balance for achieving crispier crusts at the right temperature, enhancing the overall flavor experience.
