Slow Start

With the slow start function of the rack ovens, a smoother baking process is achieved as the rotation speed of the rack is lower at the start, then gradually accelerates to the preset value. This reduces the risk of delicate products or pastries with looser batters moving or spilling over due to bumps, shocks, or vibrations.

In the panel's service menu, you can adjust the settings for acceleration time at the start of the baking sequence as well as the rotation speed of the rack in percentage.

The function works in both manual baking sequences and in recipes. When creating a recipe, you can input up to 8 different speeds and specify how long each speed should apply during the baking sequence.

During all baking sequences, you have the option to adjust the rotation speed by clicking on the symbol below. The symbol is only visible if the "Advanced Baking" function is activated in the service menu under the "Oven" tab.

The slow start function is standard for Sveba Dahlen's V-Series and I-Series rack ovens and is optional for the C-Series.
