Tobias Gundahl Eriksson
Since 2021, Tobias Gundahl Eriksson has been running Svanskogs Pizzeria. It wasn’t an obvious career choice for a young man whose original goal was to become an elite hockey goalie and who also trained as an electrician. A twist of fate led him to a completely different path: restaurant ownership. After receiving a vaccine, Tobias was diagnosed with narcolepsy, which made it challenging to complete his studies as he could fall asleep at any moment.
Tobias has always had a deep interest in food and the ways the culinary world can evolve. This passion led him to start working at a pizzeria, and it didn’t take long before he was ready to take on the role of owner, together with his mother, Ulrika Gundahl.
He immersed himself in learning about pizza, quickly becoming captivated by the Neapolitan style. In 2023, he attended the Fastfood & Café Stockholm fair, where he watched the Nordic Pizza Champion Cup. At that moment, he decided he wanted to compete as well. In February of the following year, after just two years as a pizza chef, Tobias stood on stage to present his own creation—a Neapolitan-style pizza. He placed 10th in the Nordics, receiving high praise and motivation to aim even higher. In September 2025, Tobias plans to return to the stage, this time competing in the Gourmet Pizza category, with hopes of finishing in the top 5.
"Honestly, I love fishing," says Tobias, "but most of my time now is spent improving myself and my business, focusing on pizza and à la carte dishes. For instance, I just came back from Rome, where I learned more about pizza."
"I’m a realist. I only have three years of experience and no background in the restaurant industry," Tobias admits. "And my mom? She absolutely hates being in the kitchen—she’d rather repair the car! But I suppose I must admit I’m probably pretty skilled, considering that our little restaurant, in the middle of nowhere, attracts guests from all over the country!"
